Coined as one of the “healthiest food on earth,” tapenade, featured with toast as part of our Baked Goat Cheese Provencal, is a crowd favorite at Zazou. If you want to make tapenade at home, chop about 20 Kalamata olives and mix with one tablespoon of drained, chopped capers. Mix in two tablespoons of olive oil, a squeeze of lemon juice, and a dash of pepper. This is a traditional tapenade recipe, with olives as the highlighted ingredient but we also think it is fun to experiment with other flavors.
Adding chopped sun dried tomatoes, basil, and garlic can take hummus to a whole new level. It’s also delicious to add chopped artichokes, chile powder, and replace the Kalamata olives with green olives for an unexpected spice to your tapenade.
Serve any of the varieties of tapenade as a spread on toast or sandwich. Tapenade is also delicious served with crackers and veggies.
